Spicy Asian Cucumber Salad

Directions

Slice cucumbers
Add a tablespoon of salt and let sit for 5 mins
Rinse the cucumbers to remove salt
Pat cucumbers dry with a paper towel

To make dressing:
1 tablespoon soy sauce
1 tablespoon rice vinegar
1 teaspoon chili oil
1 teaspoon toasted sesame oil
3 minced garlic cloves
1 tablespoon white sugar
1 tablespoon sesame seeds
Optional– red pepper flakes

Roots of Power: Celebrating Our 2026 Student Leadership Conference

On May 1, Teens for Food Justice held its annual Student Leadership Conference at West End Labs in Manhattan. 122 students from 11 New York City schools joined teachers, farmer-educators, partners, board members, volunteers, and staff, 184 attendees in total, for a full day of storytelling, skill-building, and civic learning. This year’s theme, Roots of Power, centered student agency as the foundation of food system change.

TFFJ Receives $100,000 Innovation Grant from Impact 100 NYC

Funding will expand farm-based programming to students with disabilities across New York City.

Teens for Food Justice has been awarded a $100,000 Innovation Grant and a $10,000 Operating Grant from Impact 100 NYC to expand its farm-based programming for students with disabilities.
