Little Red’s Forest Flatbread

TFFJ students at The Scholars’ Academy used food as a storytelling tool this spring with a recipe inspired by their school’s production of Into the Woods. Created under the guidance of 11th grade teacher Melissa Redden, Little Red’s Forest Flatbread features fresh fruits and vegetables in rich green tones—reflecting the forest Little Red walks through on her journey.

The dish was served to guests attending the drama performance, offering a creative way for students to connect food, art, and community. This is what TFFJ is all about: helping young people build a deeper relationship with food, health, and the world around them.


Ingredients (TFFJ Produce Highlighted 🌿)

  • 3 cups Butterhead Lettuce, torn into bite-sized pieces 🌿
  • 1 cup Microgreens (like Arugula, Radish, Broccoli, or any earthy microgreens) 🌿
  • 2 pears, thinly sliced
  • 1/4 cup fresh Basil, chopped
  • 1/4 cup Pumpkin Seeds
  • Salt and Pepper, to taste
  • Crunchy bread or Flatbread crackers

Dressing:

  • 1/4 cup Genovese Basil, finely chopped 🌿
  • 2 tbsp Dill, finely chopped
  • 1/2 cup Lemon Juice (about 3–4 lemons)
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 3/4 cup Olive Oil

Directions

1. Cut your leafy greens and fruits into the proportions written in the ingredient list
2. Mix your leafy greens and fruits together in a large bowl, making a nice green salad
3. Add the dressing and mix very well!
4. Place a flatbread cracker or bread piece on a plate and top it with your salad and dressing mix
