INGREDIENTS:
- Butterhead, Red Leaf or Romaine Lettuce
- 1-2 Potatoes
- Olive Oil
- 1 lb. Ground Beef or Crumbled Seitan
- 1 Can Black Beans
- 2-3 Garlic Cloves, minced
- Cheese (optional)
- Chili Powder
- Salt
- Pepper
DIRECTIONS
- Wash and prep lettuce and mince garlic.
- Drain and rinse black beans.
- Slice potatoes into ½-inch rounds.
- Optional: Cut ½-inch potato rounds into heart shapes.
- Par-boil cut potatoes for about 2-3 minutes, remove with a slotted spoon and set aside.
- In a skillet, heat 2-3 tbsp olive oil and add minced garlic. Cook until softened and fragrant.
- Add ground beef or seitan to skillet and cook until fully cooked. Season to taste with chili powder, salt and pepper.
- Stir in drained black beans and cook. Season to taste.
- Once beef/seitan and black bean mixture is fully cooked and heated through, add to a bowl and set aside.
- Heat 2-3 tbsp olive oil until hot and simmering.
- Add potatoes and cook on each side until golden brown and crispy.
- Assemble Love Wraps by taking a lettuce leaf, adding a few spoonfuls of beef/seitan and bean mixture and a few crispy potatoes.
- Top with cheese, hot sauce or your favorite salsa and enjoy!
