Love Wraps

Ingredients (TFFJ Produce Highlighted 🌿)

  • Butterhead, Red Leaf or Romaine Lettuce 🌿
  • 1-2 Potatoes
  • Olive Oil
  • 1 lb. Ground Beef or Crumbled Seitan
  • 1 Can Black Beans
  • 2-3 Garlic Cloves, minced
  • Cheese (optional)
  • Chili Powder
  • Salt
  • Pepper

Directions

  1. Wash and prep lettuce and mince garlic.
  2. Drain and rinse black beans.
  3. Slice potatoes into ½-inch rounds.
  4. Optional: Cut ½-inch potato rounds into heart shapes.
  5. Par-boil cut potatoes for about 2-3 minutes, remove with a slotted spoon and set aside.
  6. In a skillet, heat 2-3 tbsp olive oil and add minced garlic. Cook until softened and fragrant.
  7. Add ground beef or seitan to skillet and cook until fully cooked. Season to taste with chili powder, salt and pepper.
  8. Stir in drained black beans and cook. Season to taste.
  9. Once beef/seitan and black bean mixture is fully cooked and heated through, add to a bowl and set aside.
  10. Heat 2-3 tbsp olive oil until hot and simmering.
  11. Add potatoes and cook on each side until golden brown and crispy.
  12. Assemble Love Wraps by taking a lettuce leaf, adding a few spoonfuls of beef/seitan and bean mixture and a few crispy potatoes.
  13. Top with cheese, hot sauce or your favorite salsa and enjoy!
