Butterhead Salad With Cilantro Vinaigrette

Ingredients (TFFJ Produce Highlighted 🌿)


1 bunch of butterhead lettuce, chopped 🌿
1 tomato, chopped
1 red onion, finely chopped
Croutons, etc, for garnish

For the dressing:
1 bunch cilantro
1 clove garlic
3 tbsp plain yogurt
2 ½ tbsp olive oil
1 tsp each: honey, lime juice, salt


Directions


– Wash and chop the butterhead lettuce, tomato, and red onion.
– Toss together in a large bowl and set aside.

Prepare the dressing:
– Place all ingredients in a food processor and pulse until smooth.
– Taste and adjust seasonings to your liking.
– Add a small amount of sugar if you want it a little sweeter.
– You can also add water depending on how thick you want the dressing to be.
– Pour the dressing over the chopped salad and toss to combine.
– Top with croutons as desired.
