Vegan Kofta with Tzatziki
Students in the afterschool culinary club at Murry Bergtraum Educational Campus (MBEC) brought the farm into the kitchen with this vegan kofta and tzatziki recipe. Fresh mint, cilantro, dill, and parsley grown in the school’s hydroponic farm add bright flavor to every bite.
Cooking together gave students a chance to experiment with herbs they helped grow and see how fresh ingredients shape a dish from start to finish. The result was a table full of plates and a lot of excitement about trying something new.
Inspired by a recipe from Rabbit and Wolves, students adapted the dish using herbs harvested right from their school farm.
Ingredients (TFFJ Produce Highlighted 🌿)
KOFTA
- 16 ounces of vegan ground beef (Beyond Beef)
- 1/2 a red onion, grated
- 4 cloves of garlic, grated
- 1/2 cup fresh dill, chopped 🌿
- 1/2 cup fresh mint, chopped 🌿
- 1/2 cup fresh cilantro, chopped 🌿
- 1/2 cup fresh parsley, chopped 🌿
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1/2 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
TZATZIKI SAUCE
- 1 cup Greek-style yogurt
- 1 cup grated cucumber
- 1-3 tablespoons fresh dill 🌿
- 1-3 tablespoons fresh mint 🌿
- 2 cloves of garlic, grated
- 1 tablespoon lemon juice
- 1/2 teaspoon lemon zest
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon Za’atar seasoning (optional)
FOR SERVING
- Flatbread
- Pita Bread
- Lettuce
- Tomato
- Hummus
Directions
- Preheat the air fryer to 400 degrees(F).
- In a large mixing bowl, add the vegan ground beef, grated onion and garlic, the fresh herbs, and all the spices. Mix everything together until completely combined. Start with a spoon, then use your hands, a spatula, or a fork.
- Divide the kofta mixture into small, equal-sized balls. Place onto the air fryer baking sheet.
- Bake for 10-12 minutes or until they are nice and firm.
- While the kofta bakes, make the tzatziki. Add all the tzatziki ingredients to a medium-sized mixing bowl and whisk to combine.
- Once the kofta has baked, remove from the oven and serve immediately with the tzatziki sauce, flatbread, and veggies if desired.
