Spicy Asian Cucumber Salad

6th grade class at The Scholars Academy | Inspired by a recipe from @mushykimchi | Made with cucumbers harvested from the TFFJ farm


Ingredients (TFFJ Produce Highlighted 🌿)

4 Cucumbers 🌿
Salt
Soy Sauce
Rice Vinegar
Sugar
Chili oil
Garlic
Sesame seeds
Toasted sesame oil


Directions

Slice cucumbers
Add a tablespoon of salt and let sit for 5 mins
Rinse the cucumbers to remove salt
Pat cucumbers dry with a paper towel

To make dressing:
1 tablespoon soy sauce
1 tablespoon rice vinegar
1 teaspoon chili oil
1 teaspoon toasted sesame oil
3 minced garlic cloves
1 tablespoon white sugar
1 tablespoon sesame seeds
Optional– red pepper flakes
